When pan frying lions mane, start off by heating your skillet over medium to medium high heat. You'll want to cook them until they release a decent amount of their water before adding any seasonings, oil, or butter. Press them to speed up the process of releasing water. After they have released a decent amount of water, you are good to add butter and seasonings. In my opinion, you can't go wrong with butter, salt, pepper, and garlic powder but feel free to experiment with you favorite seasonings. Cook until you reach your desired level of crispiness. When cooking lions mane, especially in this fashion, it is important to not add any butter or oils until the mushrooms have had a chance to release their water. If you add butter or oil before they are ready, they will absorb whatever you add and get overly mushy.
